Chickpea Curry
Ingredients:
- 2 tablespoons olive oil
- 1 onion, diced
- 3 garlic cloves, minced
- 1 teaspoon grated ginger
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 1/4 teaspoon cayenne pepper
- 1 can diced tomatoes
- 2 cans chickpeas, drained and rinsed or freshly cooked chickpeas
- 1 cup vegetable broth
- 1/2 cup coconut milk
- Salt and pepper to taste
- Fresh cilantro, chopped for garnish
- Feel free to toss in other veggies like potatoes, carrots, etc
Instructions:
- Heat the olive oil in a large skillet over medium heat.
- Add the onion and cook until softened, about 5 minutes.
- Add the garlic and ginger, and cook for another minute.
- Add the cumin, coriander, turmeric, and cayenne pepper, and cook for another minute.
- Add the diced tomatoes, chickpeas, vegetable broth, and coconut milk.
- Bring the mixture to a simmer, and cook until the chickpeas are heated through and the sauce has thickened slightly, about 15-20 minutes.
- Season with salt and pepper to taste.
- Serve over rice or with naan bread, and garnish with fresh cilantro.
