Vegan Bone Broth Recipe

Here is a simple recipe for vegan bone broth:
Ingredients:

  • 1 large onion, chopped
  • 3-4 carrots, chopped
  • 3-4 celery stalks, chopped
  • 1-2 cloves of garlic, minced
  • 1-2 inches of ginger, peeled and sliced
  • 1-2 sheets of nori or kombu seaweed
  • 1-2 tablespoons of olive oil
  • 8-10 cups of water
  • 1 bay leaf

Instructions:

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion, carrots, celery, garlic, and ginger and cook until the vegetables start to soften, about 5-10 minutes.
  3. Add the nori or kombu seaweed, bay leaf, black peppercorns, and any fresh herbs you want to use.
  4. Pour in the water and bring the mixture to a boil.
  5. Reduce the heat to low and simmer the broth for at least 30-60 minutes, or until the vegetables have fully released their flavors and the broth has a rich taste.
  6. Strain the broth through a fine-mesh strainer, pressing on the solids to extract as much flavor as possible.
  7. Allow the broth to cool and then store it in an airtight container in the refrigerator for up to 5 days or in the freezer for up to 3 months.
